I love these images! I am so glad to hear of the cocktail culture continuing in what was once called the Sir Francis Drake Hotel, now named The Beacon Grand. What a history! During Prohibition "servidors," were used to discreetly transport booze to eager guests in the hotel that had everything!
I have vintage postcards of the iconic Starlite Room! There's a featured cocktail from the place printed in Ted Saucer's Bottoms Up. We captured a slice of the hotel's history in our book, Cocktails Across America.

Your typical like of dry ice deal, poured into the bowl of the drink.
Was wondering if it was smoke or CO2 from dry ice.
