30 years ago, I drank at the Raffles Bar in Singapore but my most delightful Chinese drinking memory is sweet rice balls in fermented rice wine aged 30 years in a decrepit village near Shanghai where they had buried the amphora for years to keep it from the local Communist cadres who would have stolen it.
